What's Fresh this week?


Ok, lettuce can be really boring but it's a great source of vitamins and minerals and it's very versatile. One of the main benefits of lettuce is its high water content. Although it may not be as nutrient-dense as other veggies like kale and beets, it's great to include in your summer diet because of its hydrating effects. It still boasts an impressive list of beneficial vitamins, like vitamins K and A, as well as folate. Let's see what else we can do with our lettuce besides a simple salad, although you should eat lots of those ;).


Mango smoothie with lettuce


2 ripe bananas

2 cups fresh or frozen mango

1 cup strawberries

2 cups chopped lettuce (any variety)

1 in. piece ginger

32 oz. fresh orange juice

1 cup ice

Add all ingredients to a blender. Blend for 2 minutes or until smooth. Add more liquid if needed. Enjoy while cold.
