Beets
Beets are the underdog of superfoods. It gets some attention as being extremely nutritious and beneficial to our health but some people just never get into them. Beets are great because, most of the time, they offer a two-for-one deal, because you get the root (that’s the red part that we’re all familiar with) and the greens, which many people discard. You can treat the green tops as you would any leafy green vegetable. Add it to your pot of collards, kale, or mustards. The tops usually have some red color, so you’ll be getting a dose of one of the beneficial nutrients found in beets, which is the pigment betanin. The roots are also packed with fiber, vitamin C, and folate, an essential nutrient helpful for pregnant women. Beets are known to turn your urine and bowel movements red (so don’t panic if you see a little streak when you hit the toilet after eating your beets).
Garden Salad with Beets
Ingredients
1 head Lettuce, rinsed and chopped
1 medium cucumber, chopped
1 large tomato, chopped
2 medium carrots, grated
1 stalk celery, chopped
1 large avocado, diced
1 medium beet, grated
2 Tbs Olive oil
1 Tbs Vinegar
salt & pepper, to taste
Preparation
1. Put lettuce into a large bowl.
2. Add other veggies.
3. Rinse beets and remove long root at the end. Grate with a cheese grater over the salad.
4. Toss together.
5. Add oil and vinegar. Season to taste.
6. Chill until time to serve. Add your favorite dressing.
7. Enjoy!
