Watermelon
Melons are amazing little (or big) fruits. Watermelons contain up to 92% water, so they're hydrating on those hot, summer days. Red watermelons contain lycopene, which is a carotenoid, or a pigment, that’s responsible for the red color of strawberries and tomatoes. Lycopene is also an anti-oxidant that has anti-inflammatory properties as well as the ability to keep our eyes healthy and strong. Watermelons are in season in NJ in late summer so we do our best to enjoy them while they’re available. But they can be preserved by cutting up and freezing to add to juices and smoothies later in the year.
Watermelon Juice
Ingredients
Watermelon
Lime
Mint
Preparation
1. Chop watermelon in chunks.
2. Add watermelon to blender and blend for 30 seconds or so.
3. Pour into glasses and add a squeeze of lime.
4. Add a few mint leaves to the glass for garnish and taste. Stir.
5. Enjoy!
