Tomatoes
At Free Haven Farms, we like to call cherry tomatoes “nature’s candy”. All tomatoes have a subtle sweetness that reminds us that they are, in fact, a fruit. Cherry tomatoes, when ripened on the vine, are as sweet as a summer berry. They pack a load of vitamin C, as well as potassium, vitamin K, and folate, which is vital for a healthy pregnancy. Tomatoes have become famous, recently, for its lycopene content. Lycopene is a red pigment and is a powerful antioxidant that has been linked to numerous health benefits, such as lowering cholesterol and reducing the risk for heart attack and stroke. Tomatoes contain the most benefits when consumed raw and can be used for homemade salsa, gazpacho, or even juiced. Be creative with them and find new ways to eat this amazing food while it’s in season.
Pasta with fresh tomatoes and basil
Ingredients
1 pint cherry tomatoes
2 cloves garlic, minced
1 medium onion, diced
1 bell pepper, diced
2 Tbs olive oil
2 Tbs fresh basil, minced
Salt & pepper
1 lb cooked pasta
Preparation
1. Heat olive oil on medium heat in skillet. Add onions and peppers and saute for a few minutes.
2. Add garlic and cook for 1 minute.
3. Add tomatoes and a sprinkle of salt and cook for 10 minutes, stirring frequently.
4. Top with basil and add tomato mixture to pot with cooked pasta. Season with salt & pepper to taste.
5. Enjoy!
