Cucumbers
Cucumbers are a long-time crowd favorite, but there are some things about cucumbers that you may not know. First off, it’s a fruit! Well, botanically speaking, anyway. Because there are seeds on the inside of the cucumber, that makes it the fruit part of the plant. If you look at the picture below, you may notice a yellow flower in the background. That’s the cucumber blossom, the flower that gets pollinated to produce the fruit. Cucumbers have a great deal of health benefits, as well. They contain a lot of water, so eating cucumbers can help you to stay hydrated, especially in the hot summer months. Cucumbers are also rich in antioxidants and have been shown to help with weight loss and even diabetes, lowering blood sugar. The peel of the cucumber is especially powerful in aiding with other symptoms of diabetes and since ours is organic, you can safely enjoy all of the nutritious benefits of the skin without risk of ingesting pesticides.
Cucumber Salad
Ingredients
1 Medium or 2 small Cucumbers, sliced
½ onion, sliced
½ tsp salt
½ cup vinegar
¼ cup water
¼ cup sugar
fresh herbs
Preparation
1. Put cucumber into a bowl and sprinkle with salt. Allow the moisture to draw out (20 minutes or so) and pat dry.
2. Mix in the onion.
3. Add vinegar, water, and sugar to a pot and heat until sugar dissolves.
4. Pour mixture over cucumbers and season with your favorite herbs (parsley, basil, or dill works well).
5. Feel free to double or triple this recipe for a larger crowd.
6. Chill for at least 1 hour until time to serve.
