Blueberries
When blueberry season is upon us, like with all seasonal foods, you have to enjoy them while they last. Did you know that Hammonton, NJ is the blueberry capital of the world? Yes, the whole world! Blueberries thrive in the sandy, acidic soils that naturally occur in NJ, as do tomatoes and cranberries. Makes sense, right? As most people know, blueberries are extremely nutritious and are labelled as a superfood. They’re full of antioxidants, including anthocyanins, which give them the rich blue color and help to reduce blood sugar as well as improve insulin sensitivity. Blueberries are also high in vitamin C, vitamin K, and manganese. Although fresh, Jersey blueberries aren’t available all year, the summer is a good time to stock up and freeze some for the winter months. Even the local grocery store will have NJ blueberries on sale during the summer ;)
Blueberry Lemonade
Ingredients
2 cups blueberries
¾ cup sugar
juice from 6 or so lemons
4 cups water
Garnishes (lemon slices, mint, basil, etc.)
Preparation
1. Put blueberries, sugar, and 1 cup of water in blender. Blend for a minute.
2. Mix with lemon juice in a small pitcher.
3. Add remaining water and stir well.
4. Garnish with lemon slices or fresh herbs, like mint or basil.
5. Chill for at least 2 hours until time to serve.
6. Enjoy!
